gnu: emacs-doom-themes: Only disable breaking compilations.

* gnu/packages/emacs-xyz.scm (emacs-doom-themes)[phases]:
<build>: Readd this phase.
<disable-breaking-compilation>: Add this phase to work around single file
errors in bytecompilation.
