gnu: mariadb: Move unbundle substitutions to source snippet. 

* gnu/packages/databases.scm (mariadb)[source](snippet): Add two substitutions
from ...
[arguments]: The 'unbundle' phase here.  Rename to 'fix-pcre-detection.
