gnu: pigx-sars-cov2-ww: Fix Python module capture. 

The build system expects all Python modules to be on PYTHONPATH.

* gnu/packages/bioinformatics.scm (pigx-sars-cov2-ww)[arguments]: Set
PYTHONPATH variable in new build phase.
