gnu: gnucash: Update help installation prefix. 
The help installation prefix was changed upstream to match the XDG 'help-spec'
specification (see:
https://www.freedesktop.org/wiki/Specifications/help-spec/).

* gnu/packages/gnucash.scm (gnucash) [arguments]: Adjust install-docs phase.
